We have an old ~1920s era post office down the street from me, and I always fantasize about turning it into a coffee shop or other store were it to ever close...
The Flemington post office building was sold several years ago with a deed restriction that the PO most continue to have some space for retail services. The building was divided up and the remainder of the space has become mixed retail with offices, a consignment shop, a printer, and probably some other stuff.
There were two decent sized post offices / processing centers in Bethesda MD that were consolidated into a new larger facility. One was demolished and the land was developed into commercial and residential space (apartments over a car dealer) and the other is now a Buddhist temple (on Seven Locks road, if you're interested).
There are some coffee shops in the KC Metro area that are in former service stations. A building with a couple of service bays is a good-sized footprint for tables, chairs, and people.
The former PO in Pennington, NJ, is now a hairdresser.
Post office in Plymouth, Michigan is now a small grocery store.
